    steamed artichokes

    Prep time: 40-50 minutes
    Servings: 4


    2 whole artichokes

    2 tbsp. olive oil

    1 tsp. sea salt


    Steam artichokes 30-40 minutes until tender. Remove and plate. Drizzle with olive oil and sprinkle with sea salt. Serve and enjoy.



    fresh basil and garlic brussels sprouts

    Prep time: 20 minutes
    Servings: 4

    12 oz. fresh Brussels sprouts washed
    12 fresh basil leaves
    2 tbsp. extra virgin olive oil
    ½ tsp. sea salt
    1 tsp. garlic powder

    Steam Brussels sprouts for 15-20 minutes until tender. Meanwhile, on low heat, sauté remaining ingredients for 10 minutes. Combine sauté mixture and Brussels sprouts. Plate and serve. Garnish with fresh basil.


    vegan/vegetarian stuffed peppers

    Prep time: 55 minutes
    Servings: 4

    4 peppers (red, green, yellow, or a mixture), washed, with tops and seeds removed
    2 cups cooked brown rice (or your favorite rice)
    1 cup salsa
    15 oz. black beans cooked, rinsed, and drained
    2/3 cup bread crumbs
    2 tbsp. extra virgin olive oil

    Preheat oven to 350°. Mix the cooked rice, salsa, beans, and bread crumbs in a large bowl. Coat baking dish with 1 tbsp. olive oil. Stuff the peppers with the rice mixture. Place the stuffed peppers in the baking and drizzle with the remaining tablespoon of olive oil. Place in oven and bake for 45 minutes. (Optional: sprinkle ½ cup shredded cheese on top before baking, making them non-vegan.) Garnish with fresh parsley or cilantro and serve.  


    roasted veggies

    Servings: 6

    8 oz. mushrooms sliced
    1 lb. Swiss chard
    1 yellow zucchini sliced
    1 green zucchini sliced
    1 onion sliced
    2 tbsp. extra virgin olive oil
    1 tsp. sea salt
    1½ tbsp. Italian seasoning
    ½ cup water
    dried parsley for garnish

    Preheat oven to 350°. Mix ingredients in a large baking dish and roast uncovered for 40 minutes. Garnish with parsley. Salt and pepper to taste.


    roasted pepitas with sunflower seeds

    Prep time: 30 minutes
    Servings: 8

    2 cups pepitas raw
    1 cup sunflower seeds raw
    3 tbsp. extra virgin olive oil
    2 tbsp. Bragg Liquid Aminos or light soy sauce

    Preheat oven to 350°. Mix all of the ingredients thoroughly in a baking dish. Bake for 15 minutes. Stir thoroughly and bake for an additional 15 minutes. Remove from oven. Allow to cool, and enjoy as a healthy snack or as an addition to a salad or entrée.
